Among the many things Goa is popular for, one of them is delicious fish preparations. Baked fish is something that you can cook in a regular oven though today we’ll also show you how to make a perfectly baked fish in a woodfired oven built right at the beach. Baked fish is a simple recipe, and the taste will depend largely on both the type of the fish and the herbs and ingredients you use.
Preheat the oven at 180°C.
Take the cleaned, descaled fish and remove the fins from both the sides. Then along each side, make sharp diagonal slits with the knife, about 1 cm deep.
Take the banana leaves and slit them lengthwise along the centre.
Place 2-3 layers of aluminium foil and position the banana leaves on the foil. Layer the banana leaf to make a base using ginger, garlic, and chillies. Pound the bottom of the lemongrass and place them on top of the ginger, lemon, garlic. Add rosemary, basil, and parsley. These don’t need to be finely chopped but make sure to spread them out evenly.
Rub salt gently on both sides of the fish. Place the fish on top of the base.
Take smaller pieces of herbs, and slices of ginger-lemon and insert them into the slits that we made earlier.
Layer the top of the fish with more herbs, and stuff the leftover slices of ginger, garlic, and lemon into the belly of the fish.
Add olive oil into the belly and some of it on the top of the fish.
Now you can wrap the fish in the banana leaves and use some lemongrass stands to tie it up.
Wrap the fish in a few layers of aluminium foil and it’s ready to bake.
If you’re using an oven, preheat it to 150-180 degrees and cook the fish for about 25-30 minutes and treat yourself to some juicy, succulent baked fish!
The most important thing to remember is to not compromise on the freshness of the fish you choose for this dish. A way to tell if the fish you’re buying is fresh is to check for the colour of its gills. Red gills mean that it’s a fresh catch.
